Mango Sago Recipe For Summers
This is one of my favorite cold desserts to make, especially when mangoes are in season.
It comes together pretty quickly and the result is creamy, lightly sweet, and satisfying. Here’s exactly how I do it.

What You’ll Need

- Ripe mangoes make the biggest difference here. The sweeter they are, the better the dessert tastes. I prefer fresh, but frozen mango chunks work fine when fresh ones aren’t available.
- Sago pearls are small white tapioca balls that turn soft and slightly translucent after cooking. They’re what give the dessert its signature chewy texture.
- Evaporated milk to make the mango base creamy without it feeling too rich or heavy.
- Condensed milk adds sweetness and a smooth finish, I adjust the amount based on how sweet my mangoes already are.
- Full-fat coconut milk

How to Make Mango Sago
1. Cook the Sago: Bring a pot of water to a boil, add the sago pearls, and stir right away so they don’t stick together.
Cook for 12 to 15 minutes, stirring occasionally, until most pearls turn translucent. A few white centers are fine.

Turn off the heat, cover the pot, and let the sago rest for another 10 to 15 minutes. This finishes the cooking gently and keeps them from getting mushy.
2. Rinse and Cool: Drain through a fine mesh strainer and rinse well under cold water to remove excess starch. Keep the sago sitting in a bowl of cold water while you prepare the rest, this stops them from clumping together.

3. Blend the Mango Base: Blend chopped ripe mango with evaporated milk until smooth. You can add a splash of coconut milk here too if you want a slightly richer base. Taste it and hold off on adjusting sweetness until everything is mixed together.

4. Mix Everything Together: Drain the sago and add it to a large bowl along with the mango puree, coconut milk, condensed milk, and fresh mango chunks. Stir until evenly combined. Fold in any extras like jelly, pomelo, or boba at this point.
